Making Beer in the Summer

When beer is fermented hot you often get an over cooked vegetable taste. The challenge here is to keep the temperature under control. You have two things working against you, the weather and the fact that fermentation gives off heat. The primary fermentation takes from 3-7 days, the warmer the fermenter the faster the fermentation happens.
You should have a thermometer on your fermenter, the fermentation temperature should be no more than 26°C or 79°F, a little less ids better. If you have a basement you can set the fermenter right on the floor, or on a piece of cardboard or plywood, this will help bring the temperature down. If you don't have a basement, than placing a fan so as to cool the fermenter works. If this doesn't hold the temperature, then wrap the fermenter with a wet bath towel and use the fan. I know of a situation where a person sat the fermenter in a bathtub with cool water.
